    Slice the Steak

    Thinly slice the ribeye steak against the grain and set aside.

    Prepare the Vegetables

    Slice the onion and bell pepper into thin strips.

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and bell pepper, sprinkle with a pinch of salt, and sauté until they are softened and slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the sliced ribeye steak. Season with salt and black pepper. Cook for about 3-5 minutes, stirring frequently, until the steak is browned and cooked through.

    Combine Ingredients

    Return the sautéed onions and bell peppers to the skillet with the steak. Mix well and let everything heat together for an additional 2 minutes.

    Melt the Cheese

    Place two slices of provolone cheese over the steak and vegetable mixture. Cover the skillet with a lid for about 1-2 minutes or until the cheese is melted.

    Prepare the Hoagie Rolls

    Slice hoagie rolls lengthwise without cutting all the way through. Optionally, toast them lightly in a separate skillet or oven.

    Fill each hoagie roll with the steak, onion, and pepper mixture. Serve immediately.
