Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Biscuit Dough
In a large mixing bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk and buttermilk until just combined.

Shape the Biscuits
Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick rectangle. Cut out biscuits using a biscuit cutter or a glass.

Bake the Biscuits
Place the biscuits on a baking sheet lined with parchment paper, ensuring they are touching slightly. Bake for 12-15 minutes or until golden brown.
Sausage Gravy

Cook the Sausage
In a large skillet over medium heat, cook the ground sausage until browned and fully cooked, breaking it up with a spatula.

Make the Roux
Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.

Add Milk and Simmer
Gradually whisk in the milk, stirring constantly until the mixture thickens. Add the salt, black pepper, and red pepper flakes. Let it simmer for 5 minutes.
