Dough Preparation

Activate Yeast
In a small bowl, combine warm water (1.5 cups) and granulated sugar (1 tbsp). Sprinkle the active dry yeast (2 tsp) on top. Let sit for 5-10 minutes until frothy.

Mix Dough
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tbsp). Make a well in the center and pour in the activated yeast mixture and vegetable oil (1 tbsp). Stir until a shaggy dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Form the dough into a ball.

Place the dough ball in a lightly greased bowl, cover with a damp cloth, and let rise in a warm place for 1 hour or until doubled in size.
Shaping and Boiling

Shape Bagels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then poke a hole in the center with your finger, stretching it into a bagel shape.

Boil Bagels
Carefully drop the shaped bagels into the boiling water, 2-3 at a time. Boil for 1 minute on each side, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.

Preheat Oven
Preheat your oven to 425°F (220°C).

Add Toppings
If desired, sprinkle sesame seeds (0.5 cups), poppy seeds (0.5 cups), or coarse salt (1 tbsp) on top of the bagels before baking.

Bake the bagels in the preheated oven for 20-25 minutes or until golden brown, rotating the baking sheet halfway through for even baking.
