    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into evenly sized sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Heat the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of soaked potatoes to the hot oil. Fry for about 5-7 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    While the fries are still hot, sprinkle them with salt and, if desired, Cajun seasoning for a spicy kick. Toss to ensure even coating.
