Prepare the Chicken

Preheat the oven to 375°F (190°C). Pat the chicken halves dry with paper towels and place them in a roasting pan.

Season the Chicken

Drizzle the chicken with olive oil and season generously with salt, black pepper, garlic powder, paprika, and fresh rosemary.

Roast the Chicken

Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.

Make the Mashed Potatoes

While the chicken is roasting, boil the chopped potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Mash the Potatoes

Add butter and milk to the potatoes and mash until smooth. Season with salt and pepper to taste.

Prepare the Gravy

In a saucepan, heat the chicken broth over medium heat. In a separate bowl, mix the flour with a little water to make a slurry. Add the slurry to the chicken broth, whisking until thickened. Season with salt and pepper.

Serve

Plate the roasted chicken halves with a generous serving of mashed potatoes and drizzle with chicken gravy.
