Prepare the Mushrooms

Clean the mushrooms with a damp cloth and remove the stems if desired. Cut the mushrooms into halves or quarters if they are large.

Make the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually whisk in the cold water until the batter is smooth and lump-free.

Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

Fry the Mushrooms

Dip each mushroom piece into the batter, allowing excess to drip off. Carefully place the battered mushrooms into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes.

Drain and Serve

Using a slotted spoon, remove the fried mushrooms and drain them on paper towels. Serve hot with your favorite dipping sauce.
