Prepare the Ingredients
Rinse the perch fillets under cold water and pat them dry with paper towels. Season with salt and black pepper.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Perch
Carefully place the breaded perch fillets in the hot oil, working in batches if necessary. Fry for about 3-4 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Serve
Serve the fried perch with tartar sauce, lemon wedges, and choice of potato (fried or baked), along with optional soup or salad.
