Wash and peel the russet potatoes. Cut them into even-sized fries, about 1/4 inch thick. Rinse the cut fries in cold water to remove excess starch and then pat them dry with a kitchen towel.

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the dried potato fries to the hot oil in batches. Fry them for about 5-7 minutes or until they are golden brown and crispy. Use a slotted spoon to remove the fries and place them on a paper towel-lined plate to drain excess oil.

While the fries are still hot, sprinkle them with salt, black pepper, paprika, garlic powder, and onion powder. Toss to coat evenly.
