Prepare the Mashed Potatoes

Peel and dice the red potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and mash with butter, salt, and pepper to taste.

Cook the Green Beans

Trim the ends of the green beans. In a pot of boiling water, blanch the green beans for about 3-4 minutes until bright green and tender-crisp. Drain and set aside.

Cook the Pork Chops

Season the pork chops with salt and pepper. In a skillet over medium-high heat, add a tablespoon of oil and sear the pork chops for 4-5 minutes on each side until cooked through. Remove from the skillet and let rest.

Make the Whiskey Mushroom Gravy

In the same skillet, add sliced mushrooms and cook until browned. Pour in the whiskey and scrape the bottom of the skillet to deglaze. Let it simmer for a few minutes until reduced. Add cream or broth to thicken the gravy and season with salt and pepper.

Plate the Dish

On each plate, place a serving of mashed potatoes, top with a pork chop, drizzle with whiskey mushroom gravy, and serve with garlic green beans and a garnish of micro-greens.
