Marinate the Chicken
In a bowl, combine diced chicken and teriyaki sauce. Mix well and let it marinate for at least 30 minutes.
Prepare the Vegetables
While the chicken is marinating, chop the red bell pepper, slice the water chestnuts, and prepare the broccoli florets.
Cook the Chicken
In a large skillet or wok, heat a little oil over medium-high heat. Add the marinated chicken and cook until it's no longer pink, about 5-7 minutes.
Add Vegetables
Add the red bell pepper, water chestnuts, and broccoli to the skillet with the cooked chicken. Stir-fry for another 5-7 minutes until the vegetables are tender.
Incorporate Cashews
Stir in the roasted cashews and chopped green onions, and cook for an additional 2 minutes.
Serve
Serve the cashew chicken over a bed of cooked rice and top with crispy wontons.
