    Prepare the Steak

    Season the sirloin steak with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Sear the steak for 4-5 minutes on each side or until it reaches your desired doneness. Remove from skillet and let it rest for 5 minutes before slicing thinly.

    Make the Au Jus

    In the same skillet, add sliced onions and sauté until they are translucent. Pour in the beef broth and bring to a simmer. Let it cook for 10 minutes, allowing the flavors to meld. Strain if desired.

    Assemble the French Dip

    Slice the French rolls in half and spread garlic aioli on the inside. Layer the sliced sirloin steak on the rolls and top with provolone cheese. Place under a broiler for 2-3 minutes until the cheese is melted.

    Serve the sandwiches hot with a side of the house-made au jus for dipping.
