Prepare the Pork
In a slow cooker, combine pork shoulder, chopped onion, minced garlic, orange juice, cumin, salt, black pepper, and red pepper flakes. Cook on low for 8 hours or until the pork is tender and easily shredded.
Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker to soak up the juices.
Make the Pickled Slaw
In a bowl, combine shredded cabbage, grated carrots, apple cider vinegar, sugar, and a pinch of salt. Mix well and let it sit for at least 30 minutes to pickle.
Assemble the Tacos
Warm the taco shells. Fill each shell with shredded pork, top with pickled slaw, fresh cilantro, and a squeeze of lime juice.
