    Cook the Rice

    Rinse the basmati rice under cold water until the water runs clear. In a pot, combine 1 cup of basmati rice with 1.5 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes. Fluff with a fork and let it cool.

    Prepare the Vegetables

    Thinly slice the cucumbers, radishes, and jalapeños. Dice the avocado and chop the green onions.

    Make the Sriracha Aioli

    In a small bowl, mix the mayonnaise and sriracha together until well combined. Adjust the spice level to taste.

    Assemble the Poke Bowl

    In a bowl, start with a base of the cooled basmati rice. Top with sliced ahi tuna, cucumbers, avocado, radishes, jalapeños, and green onions. Drizzle with sriracha aioli and sprinkle sesame seeds on top. Finally, add a handful of microgreens to finish.
