Prepare the Grits

In a saucepan, bring 4 cups of chicken broth to a boil. Gradually whisk in the grits and reduce the heat to low. Cook for 20-25 minutes, stirring frequently until thickened. Stir in cheddar cheese, salt, and pepper to taste. Remove from heat and keep warm.

Cook the Sausage and Vegetables

In a large skillet, heat olive oil over medium heat. Add sliced andouille sausage and cook until browned. Add chopped onions and bell peppers, cooking until softened. Add minced garlic and cook for an additional minute.

Cook the Shrimp

Add shrimp to the skillet with the sausage and vegetables. Sprinkle Cajun seasoning over the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove the mixture from the skillet and set aside.

Make the Red Eye Gravy

In the same skillet, add brewed coffee and scrape the bottom of the pan to deglaze. Simmer for about 3-4 minutes until slightly reduced. Stir in butter and season with salt and pepper.

Serve

On a plate, spoon a generous amount of cheddar grits. Top with the sausage and shrimp mixture, then drizzle with red eye gravy before serving.
