Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

Cook the Chorizo

In a large pot, heat the olive oil over medium heat. Add the chorizo and sauté until browned, about 5 minutes.

Add Aromatics

Add minced garlic and red chili flakes to the pot. Cook for an additional 1-2 minutes until fragrant.

Prepare the Broth

Stir in the lobster stock, diced tomatoes, and saffron. Bring to a simmer and let cook for 5 minutes to meld flavors.

Cook the Mussels

Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes, or until the mussels have opened. Discard any that remain closed.
