Prepare the Chicken
Preheat the oven to 425°F (220°C). Pat the chicken dry with paper towels. Rub the olive oil all over the chicken and season generously with salt and black pepper. Stuff the cavity with garlic cloves and rosemary.
Roast the Chicken
Place the chicken breast-side up in a roasting pan. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste occasionally with the juices.
Make the Polenta
While the chicken is roasting, bring the vegetable broth to a boil in a saucepan. Gradually whisk in the polenta and cook, stirring frequently, for about 20 minutes until thickened. Stir in the Parmesan cheese and season with salt and pepper to taste.
Prepare the Pan Sauce
Once the chicken is done, remove it from the pan and let it rest. Pour off excess fat, then place the roasting pan over medium heat. Add chicken broth and lemon juice, scraping up the browned bits. Simmer for about 5 minutes.
