Prepare the Salad Ingredients
Trim the ends of the green beans, slice the red onion thinly, and roughly chop the hazelnuts. Set aside.
Cook the Salmon
Season the organic Scottish salmon fillets with salt and pepper. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the salmon for about 4-5 minutes on each side or until cooked through and flaky.
Make the Vinaigrette

In a small bowl, whisk together olive oil, lemon juice, orange juice, honey, salt, and black pepper until well combined.
Assemble the Salad

In a large bowl, combine the green beans, red onion, and hazelnuts. Drizzle with the citrus vinaigrette and toss to combine.
Serve
Plate the salad and top with the cooked salmon fillets. Crumble goat cheese on top and serve immediately.
