    Prepare the Dressing

    In a bowl, whisk together olive oil, minced garlic, lemon juice, anchovy fillets, and Dijon mustard until well combined. Season with salt and black pepper to taste.

    Grill the Romaine

    Preheat the grill to medium-high heat. Cut the baby romaine heads in half lengthwise. Brush the cut sides with a little olive oil.

    Grill the Lettuce

    Place the romaine halves cut-side down on the grill. Grill for about 2-3 minutes until they are slightly charred and wilted. Remove from the grill.

    Crisp the Asiago

    In a skillet over medium heat, add shredded asiago cheese in small mounds and cook until melted and golden brown, about 2-3 minutes. Remove and let cool to form crispy chips.

    Place grilled romaine on a serving platter. Drizzle with the dressing and top with crispy asiago cheese.
