    Prepare the Pan

    In a small saucepan, melt the coconut oil and brown sugar together over low heat. Stir until well combined and pour this mixture into the prepared pan. Arrange the pineapple slices over the mixture and sprinkle the chopped pecans on top.

    Mix the Batter

    In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients.

    Bake the Cake

    Pour the batter over the pineapple and pecan layer in the cake pan. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    Cool and Serve

    Once baked, allow the cake to cool in the pan for 10 minutes. Then, carefully invert the cake onto a serving platter. Remove the parchment paper and let it cool completely before slicing.
