    Prepare the Ingredients

    Peel and dice the potatoes. Chop the onion and garlic. Cook the bacon until crispy, then crumble it.

    Cook the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sauté until soft, about 5 minutes.

    Add Potatoes and Broth

    Add the diced potatoes, chicken broth, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, until potatoes are tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half.

    Add Cheese and Bacon

    Stir in the cheddar cheese and crumbled bacon, and let it melt into the soup for about 5 minutes.

    Serve

    Ladle the soup into bowls and garnish with chopped chives and additional bacon if desired.
