    Prepare the Patty

    In a large bowl, combine ground short rib, brisket, chuck, and pork. Season with salt and black pepper. Form into a single 8 oz. patty.

    Cook the Patty

    Heat a grill or skillet over medium-high heat. Cook the patty for about 4-5 minutes per side or until it reaches your desired doneness. In the last minute of cooking, place a slice of American cheese on top to melt.

    Caramelize the Onions

    In a separate pan, heat a little oil over medium heat. Slice the onion and add to the pan. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15 minutes.

    Assemble the Burger

    On a toasted bun, spread bacon aioli, then add the cooked patty with melted cheese. Top with caramelized onions, dill pickles, sliced tomato, and lettuce.

    Serve

    Serve the burger with a side of fries.
