    Prepare the Bacon Chive Butter

    In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and let it cool on a paper towel. Once cooled, chop it into small pieces. In a bowl, mix the chopped bacon, softened butter, and chives until well combined. Form the mixture into a log shape and wrap it in plastic wrap. Refrigerate until firm.

    Cook the Steak

    Preheat your grill to high heat. Season the sirloin steaks with salt and black pepper on both sides. Drizzle olive oil on the steaks. Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, adjusting time according to your desired doneness.

    Serve

    Remove the steaks from the grill and let them rest for 5 minutes. Top each steak with a slice of the bacon chive butter. Serve with creamy mashed potatoes on the side.
