In a large bowl, combine buttermilk, maple syrup, and eggs. Add the chicken thighs and marinate for at least 1 hour, preferably overnight.

In another bowl, mix the flour, cornstarch, waffle mix, salt, black pepper, and paprika.

Remove the chicken from the marinade and let excess drip off. Dredge each piece in the flour mixture, ensuring a good coating.

In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

In a saucepan, add 2 tablespoons of the frying oil, then whisk in 2 tablespoons of flour and cook for 1 minute. Slowly add 2 cups of chicken broth while whisking to avoid lumps. Season with salt and pepper to taste.
