Directions

  1. 1

    Prepare the Veggies

Slice the bell peppers, zucchini, and red onion into thin strips. Toss them in olive oil, salt, and black pepper.

  2. 2

    Grill the Vegetables

Preheat the grill to medium-high heat. Grill the vegetables for about 5-7 minutes or until they are tender and have grill marks. Remove from heat and set aside.

  3. 3

    Make the Feta Spread

In a mixing bowl, combine the feta cheese and cream cheese. Mash together until smooth. You can add a bit of olive oil for creaminess if desired.

  4. 4

    Toast the Ciabatta

Slice the ciabatta loaf into 1-inch thick slices. Brush each slice with olive oil and grill for about 2-3 minutes on each side until golden brown.

  5. 5

    Assemble the Crostinis

Spread a generous layer of the feta cheese mixture on each slice of grilled ciabatta. Top with the grilled vegetables and finish with fresh basil leaves.

  6. 6

    Serve

Serve immediately while warm and enjoy your delicious grilled veggie crostinis!
