Directions

  1. 1

    Cook the Pasta

In a large pot of boiling salted water, cook the angel hair pasta according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Shrimp

In a bowl, toss the shrimp with olive oil, salt, and black pepper. Preheat a grill or grill pan over medium-high heat. Grill the shrimp for 2-3 minutes on each side until they are pink and cooked through. Remove from the grill and set aside.

  3. 3

    Make the Sauce

In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chopped chives and cook for another minute.

  4. 4

    Combine Ingredients

Add the sliced mushrooms to the skillet and cook until softened, about 3-4 minutes. Then add the baby spinach and sundried tomatoes, cooking until the spinach is wilted.

  5. 5

    Toss Everything Together

Add the cooked pasta to the skillet along with the grilled shrimp and crumbled feta cheese. Toss everything together until well combined and heated through. Adjust seasoning with salt and pepper if needed.

  6. 6

    Serve

Serve the Grilled Shrimp Primavera immediately, garnished with extra chives if desired.
