Filet Medallions

Three-Citrus Butter Sauce

Seared Garlic Green Beans

Method

Filet Medallions

  1. 1

    Prepare the Steak Diane Sauce

In a skillet, melt the butter over medium heat. Add minced shallots and cook until soft. Stir in Worcestershire sauce and beef broth, bringing to a simmer. Allow to reduce for about 5 minutes. Stir in heavy cream and parsley, then set aside.

  2. 2

    Cook the Filet Medallions

Season the filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the medallions for about 4 minutes on each side for medium-rare. Remove from skillet and let rest.

  3. 3

    Top with Sauce

Slice the medallions and serve topped with the Steak Diane sauce.

Grilled Shrimp

  1. 4

    Marinate the Shrimp

In a bowl, combine olive oil, minced garlic, lemon juice, salt, and pepper. Add shrimp and toss to coat. Let marinate for 15 minutes.

  2. 5

    Grill the Shrimp

Preheat the grill to medium-high heat. Skewer the shrimp and grill for 2-3 minutes on each side until opaque and cooked through.

Three-Citrus Butter Sauce

  1. 6

    Prepare the Sauce

In a small saucepan, melt the butter over low heat. Stir in orange juice, lime juice, lemon juice, and zests. Keep warm until ready to serve.

Mashed Potatoes

  1. 7

    Cook the Potatoes

Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and return to the pot.

  2. 8

    Mash the Potatoes

Add butter, heavy cream, salt, and pepper to the potatoes. Mash until smooth and creamy.

Seared Garlic Green Beans

  1. 9

    Cook the Green Beans

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add green beans, salt, and pepper. Cook until tender-crisp, about 5-7 minutes.
