Pasta Preparation

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Cook the Pancetta
In a large skillet over medium heat, add the pancetta. Cook for about 5-7 minutes, or until crispy and golden brown. Remove from heat and set aside, leaving the fat in the skillet.

Prepare the Sauce Mixture
In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper. Set aside.

Combine Spaghetti and Sauce
Once the spaghetti is cooked, reserve 1 cup of pasta water and then drain the rest. Add the hot spaghetti directly into the skillet with the pancetta. Toss to combine and coat the spaghetti in the pancetta fat.

Season and Serve
Season with salt and more black pepper to taste. Serve immediately, garnished with chopped fresh parsley.
