Arancini Balls

Method

Arancini Preparation

  1. 1

    Cook the Rice

In a medium saucepan, bring the vegetable broth to a boil. Add Arborio rice and stir. Reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it cool.

  2. 2

    Sauté the Aromatics

In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes. Remove from heat and let cool.

  3. 3

    Combine Ingredients

In a large bowl, combine the cooled rice, sautéed onion and garlic, grated Parmesan cheese, beaten egg, salt, and black pepper. Mix well until all ingredients are incorporated.

  4. 4

    Form the Balls

Take a small amount of the rice mixture and flatten it in your palm. Place a cube of mozzarella in the center and fold the rice around it to form a ball. Repeat with the remaining mixture, placing the formed balls on a baking sheet.

  5. 5

    Bread the Arancini

Set up a breading station: place flour in one bowl, beaten egg in another, and breadcrumbs in a third. Roll each rice ball in flour, dip in egg, and coat with breadcrumbs.

  6. 6

    Fry the Arancini

In a deep pot, heat vegetable oil over medium-high heat until hot. Fry the arancini in batches until golden brown, about 4-5 minutes per batch. Remove and drain on paper towels.

Marinara Sauce Preparation

  1. 7

    Sauté Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  2. 8

    Add Tomatoes and Seasoning

Add the canned crushed tomatoes, dried oregano, and salt to the saucepan. Stir well and let it simmer for 15-20 minutes, stirring occasionally.

  3. 9

    Finish the Sauce

Stir in chopped fresh basil and remove from heat. Keep warm until ready to serve with arancini.
