Mochi Dough Preparation

    Mix the Ingredients

    In a microwave-safe bowl, combine the sweet rice flour, sugar, water, and a pinch of salt. Stir until there are no lumps.

    Microwave the Mixture

    Cover the bowl with plastic wrap or a microwave-safe lid and microwave on high for 1 minute. Remove and stir. Repeat the microwaving for another minute, then stir again. Microwave for a final minute or until the dough is translucent and sticky.

    Cool the Dough

    Allow the mochi dough to cool for a few minutes until it is manageable but still warm.

    Dust with Cornstarch

    On a clean surface, sprinkle cornstarch to prevent sticking. Turn the mochi dough out onto the surface and dust the top with more cornstarch.

    Roll Out the Dough

    Using a rolling pin, roll the mochi dough to about 1/4 inch thickness.

Assembling the Mochi Ice Cream

    Cut the Dough

    Using a round cutter or glass, cut out circles of mochi dough, about 3-4 inches in diameter.

    Scoop the Ice Cream

    Scoop a small ball of ice cream (about 1-2 tablespoons) and place it in the center of each mochi circle.

    Wrap the Ice Cream

    Gently stretch the edges of the mochi circle over the ice cream and pinch to seal. Make sure there are no gaps.

    Freeze the Mochi Ice Cream

    Place the wrapped mochi ice cream on a baking sheet lined with parchment paper. Freeze for at least 2 hours or until firm.
