Crust Preparation

Preheat Oven
Preheat the oven to 350°F (175°C).

Combine Ingredients
In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Form Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake Crust
Bake the crust in the preheated oven for 8-10 minutes, or until golden brown. Remove from oven and let it cool while preparing the filling.
Filling Preparation

Beat Cream Cheese
In a large mixing bowl, beat softened cream cheese with an electric mixer on medium speed until smooth and creamy.

Add Sugar and Matcha
Gradually add granulated sugar and green tea powder to the cream cheese, mixing until well combined.

Incorporate Sour Cream and Vanilla
Add sour cream and vanilla extract to the mixture, and continue to beat until fully incorporated.

Add Eggs
Add the eggs one at a time, mixing on low speed just until combined after each addition. Do not overmix.

Pour the filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Bake Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

Remove from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.
