Method

Preparation of Gelato Base

    Mix Milk and Cream

    In a medium saucepan, combine 2 cups of whole milk and 1 cup of heavy cream over medium heat. Stir occasionally until the mixture is heated but not boiling.

    Combine Sugar and Egg Yolks

    In a separate bowl, whisk together 3 tablespoons of granulated sugar and 4 large egg yolks until the mixture is pale and creamy.

    Temper the Egg Mixture

    Slowly pour the heated milk and cream mixture into the egg yolk mixture, whisking constantly to temper the eggs and prevent them from scrambling.

    Cook the Mixture

    Return the mixture to the saucepan and cook over medium heat, stirring constantly with a wooden spoon, until thickened and coats the back of the spoon, about 5-7 minutes.

    Add Vanilla

    Remove from heat and stir in 1 teaspoon of vanilla extract. Let the mixture cool down to room temperature.

Chilling and Churning

    Cover the gelato base with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    If using optional flavorings such as cocoa powder, fruit puree, or chocolate chips, gently fold them into the gelato during the last few minutes of churning.

Freezing
