Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler method) and stir occasionally until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a large mixing bowl, pour the heavy cream. Using an electric mixer, whip the cream on medium speed until soft peaks form. Do not overwhip. Set aside a small amount of whipped cream for garnish, if desired.

Prepare the Egg Mixture
In another bowl, separate the egg yolks from the whites. Add the granulated sugar and vanilla extract to the egg yolks and whisk until the mixture is pale and creamy.

Combine Chocolate and Egg Yolks
Once the melted chocolate has cooled slightly, slowly fold the chocolate into the egg yolk mixture until well combined.

Fold in the Ingredients
Gently fold the whipped cream into the chocolate mixture, followed by the whipped egg whites. Use a spatula and be careful not to deflate the mixture. Fold until just combined.

Divide the mousse into serving dishes or glasses. Cover and refrigerate for at least 2 hours or until set.
