    In a large pot, heat the extra virgin olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    In the same pot, add the chopped onion and celery. Sauté for about 5 minutes until softened.
