Prepare the Hanger Steak

Season the hanger steak with salt and pepper. Preheat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Prepare the Vegetables

While the steak is resting, prepare the vegetables. Dice the tomatoes and cucumber, and thinly slice the red onion.

Assemble the Gyro

On a piece of naan, spread a layer of lemon labneh. Top with sliced hanger steak, diced tomatoes, cucumbers, red onion, and petite greens. Add a dollop of olive tapenade on top.

Serve

Fold the naan over the filling to form a gyro. Serve immediately, with extra lemon labneh and olive tapenade on the side, if desired.
