    Prepare the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Remove the beards (the fibrous strands) and discard any mussels that are open or damaged.

    Sauté the Leeks

    In a large pot, heat the olive oil over medium heat. Add the chopped leeks and sauté until they are soft and translucent, about 5-7 minutes.

    Add Nduja and Wine

    Stir in the Calabrian nduja, breaking it up with a spoon. Cook for another 2-3 minutes. Then, add the white wine and bring to a simmer.

    Cook the Mussels

    Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.

    Add Tomatoes and Parsley

    Add the halved cherry tomatoes and chopped parsley to the pot, stirring gently to combine. Season with salt and black pepper to taste.

    Prepare the Baguette

    While the mussels are cooking, slice the baguette and grill or toast it until golden brown. Drizzle with olive oil and sprinkle with salt.

    Serve the mussels in bowls, spooning the broth over them. Accompany with the grilled baguette for dipping.
