Preparing the Fish
In a bowl, mix together the flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in the cold sparkling water until you have a smooth batter.

Frying the Fish
Heat the vegetable oil in a deep skillet over medium-high heat. Dip each fish fillet into the batter, allowing excess to drip off, and carefully place it into the hot oil. Fry for about 4-5 minutes per side or until golden brown and crispy. Remove and drain on paper towels.

Assembling the Sandwich
Toast the sandwich buns lightly. On the bottom half of each bun, place a fried fish fillet, followed by pickles, shredded lettuce, sliced red onions, and a generous dollop of tartar sauce. Top with the other half of the bun.

Serve the sandwiches immediately while hot, with extra tartar sauce on the side if desired.
