Prepare the Fries

Preheat your oven to 425°F (220°C). Wash and cut the potatoes into thin strips. In a bowl, toss the potato strips with olive oil, salt, and black pepper. Spread them on a baking sheet and bake for about 30-35 minutes or until golden brown and crispy, flipping halfway through.

Add Herb and Parmesan

In the last 5 minutes of baking, sprinkle the grated Parmesan cheese and chopped herbs over the fries and return to the oven until the cheese is melted and slightly golden.

Cook the Steak

While the fries are baking, season the hanger steak with salt and black pepper. Heat a skillet over medium-high heat and add butter. Once melted and bubbling, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let it rest for a few minutes before slicing.

Make the Demi-Glace

In the same skillet, add red wine and scrape up any browned bits. Let it simmer for a few minutes until reduced by half. Then add the beef stock and continue simmering until thickened, about 10-15 minutes. Season with salt and pepper to taste.

Serve

Plate the sliced steak alongside the herb-parmesan fries and drizzle the demi-glace over the steak. Enjoy your Steak Frittes!
