Method

Preparing the Elote Ribs

  1. 1

    Remove Corn from Cobs

Using a sharp knife, carefully cut the kernels off the sweet corn cobs to create 'ribs' of corn. Set aside.

  2. 2

    Season the Corn

In a large bowl, combine the corn kernels with olive oil, paprika, ground cumin, salt, and black pepper. Toss until evenly coated.

  3. 3

    Cook the Corn

Preheat a grill or grill pan over medium-high heat. Grill the seasoned corn for about 5-7 minutes, stirring occasionally, until they are slightly charred and tender.

Making the Spicy Aioli

  1. 4

    Combine Ingredients

In a bowl, mix together the vegan mayonnaise, lime juice, minced garlic, chili powder, salt, and cayenne pepper until smooth and well combined.

  2. 5

    Adjust Seasoning

Taste the aioli and adjust seasoning with additional salt or lime juice as desired.

Assembling the Dish

  1. 6

    Serve the Elote Ribs

Place the grilled corn kernels into a serving dish. Drizzle generously with the spicy aioli.

  2. 7

    Add Toppings

Sprinkle crumbled feta cheese and chopped cilantro over the corn. Serve with lime wedges on the side for squeezing over the dish.

  3. 8

    Enjoy!

Serve hot and enjoy your Sweet Corn Elote 'Ribs' as a flavorful and unique appetizer or side dish.
