Prepare the Sponge Cake

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, combine the chocolate sponge cake ingredients and mix until smooth. Pour the batter evenly into the prepared pans.

Bake the Cake

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on a wire rack.

Assemble the Dessert

Once the cakes are completely cooled, slice each cake in half horizontally to create four layers. Place one layer on a serving platter, spread a layer of vanilla mousse on top, and repeat with the remaining layers. Finish with a layer of dark chocolate ganache on the top.

Garnish

Garnish the top of the dessert with fresh berries and mint leaves. Slice and serve.

Chocolate Truffles

Prepare the Chocolate Ganache

In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped dark chocolate. Stir until the chocolate is completely melted and the mixture is smooth.

Chill the Ganache

Let the ganache cool at room temperature, then refrigerate for about 2 hours, or until it is firm enough to scoop.

Form the Truffles

Using a melon baller or small scoop, scoop out portions of the ganache and roll them into balls with your hands. Place the truffles on a baking sheet lined with parchment paper.

Coat the Truffles

Roll the truffles in cocoa powder or powdered sugar to coat. Return to the refrigerator to set for another 30 minutes.
