Dough Preparation

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, instant yeast, sugar, and salt. Mix well.

Add Wet Ingredients
Add the warm water and vegetable oil to the dry mixture. Stir until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let the Dough Rise
Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Prepare the Salsa
In a separate bowl, mix together the diced stonefruit, sweet pickle relish, chopped roasted peanuts, chopped cilantro, and lime juice. Stir until well combined.
Assemble and Steam

Shape the Buns
Once the dough has risen, punch it down and divide it into 6 equal pieces. Roll each piece into a ball, then flatten it into a disc.

Fill the Buns
Place about 1 tablespoon of the pork filling in the center of each disc. Fold the edges of the dough over the filling and pinch to seal.

Steam the Buns
Place the buns on parchment paper squares in a steamer. Steam over boiling water for about 15-20 minutes until the buns are fluffy and cooked through.

Serve the steamed pork buns warm with the stonefruit salsa on the side for dipping.
