Garlic Mashed Potatoes

Method

Preparation of Chicken

    Marinate the Chicken

    In a small bowl, mix olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper to create a marinade. Rub this mixture all over the chicken, including under the skin for better flavor.

    Prepare the Lemon

    Cut the lemon in half and place one half inside the cavity of the chicken. Squeeze the juice of the other half over the chicken.

    Let it Rest

    Cover the marinated chicken with plastic wrap and let it rest in the refrigerator for at least 1 hour or overnight for best results.

Roasting the Chicken

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Roast the Chicken

    Place the marinated chicken in a roasting pan and roast for about 1 hour or until the internal temperature reaches 165°F (75°C). Baste occasionally with the juices.

    Let it Rest

    Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Preparation of Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and cut the russet potatoes into chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, garlic powder, salt, and black pepper. Mash until smooth and creamy.

Serving

    Carve the roasted chicken and serve it with a generous scoop of garlic mashed potatoes on the side.
