Gnocchi Preparation

    Cook the Potatoes

    Boil the potatoes in salted water until fork-tender, about 20-25 minutes. Drain and let cool slightly.

    Make the Dough

    Peel the potatoes and mash them in a large bowl until smooth. Let cool completely before adding flour, egg, and salt. Mix until a dough forms.

    Shape the Gnocchi

    Divide the dough into equal portions. Roll each portion into a long rope about ½ inch thick. Cut into 1-inch pieces and use a fork to create ridges.

Bolognese Sauce Preparation

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.

    Cook the Lamb

    Add the ground lamb to the skillet. Season with salt and pepper, and cook until browned, about 8-10 minutes.

    Add Tomatoes and Wine

    Stir in crushed tomatoes and red wine. Bring to a simmer, then reduce heat and let cook for 20 minutes, stirring occasionally.

    Add Peas and Basil

    Stir in the English peas and chopped basil. Cook for an additional 5 minutes until peas are tender.

Cooking the Gnocchi

    Cook the Gnocchi

    In a large pot of salted boiling water, cook the gnocchi in batches. Once they float to the surface, they are done (about 2-3 minutes).

    Combine and Serve

    Drain the gnocchi and add to the Bolognese sauce. Toss gently to combine. Serve hot, topped with grated Parmesan cheese.
