Method

Cooking Salmon

    Prepare the Salmon

    Pat the Coho salmon fillets dry with paper towels and season both sides with salt and black pepper.

    Pan-Seer the Salmon

    Heat olive oil in a pan over medium-high heat. Once hot, place the salmon fillets skin-side down and cook for 4-5 minutes until skin is crispy. Flip and cook for another 3-4 minutes until cooked through. Remove from pan and keep warm.

Making Potato Pave

    Prepare the Potatoes

    Preheat the oven to 375°F (190°C). Peel the russet potatoes and slice them thinly using a mandoline.

    Layer the Potatoes

    In a buttered baking dish, layer the potato slices, seasoning each layer with salt and pepper. Pour heavy cream over the top and dot with butter.

    Bake the Potato Pave

    Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until golden and crispy. Let cool slightly before slicing.

Preparing Shiitake Salad

    Sauté the Shiitake Mushrooms

    In a skillet, heat olive oil over medium heat. Add shiitake mushrooms and sauté until golden brown, about 5-7 minutes. Season with salt and pepper. Remove from heat.

    Assemble the Salad

    In a large bowl, combine mixed greens and sautéed shiitake mushrooms. Drizzle with balsamic vinegar and olive oil, tossing to coat evenly.

Making Piccata Sauce

    Deglaze the Pan

    In the same pan used for the salmon, add white wine and lemon juice. Scrape up any browned bits from the bottom of the pan and let simmer for 3 minutes.

    Finish the Sauce

    Stir in capers, butter, and chopped parsley. Cook until butter is melted and sauce is slightly thickened, about 2-3 minutes.

Serving

    Plate the Dish

    On each plate, place a slice of potato pave, top with a piece of pan-seared salmon, and drizzle with piccata sauce. Serve the shiitake salad on the side.

    Add Truffle Oil

    Finish the dish with a drizzle of truffle oil over the salmon and salad for an added gourmet touch.
