Dark Chocolate Layer

Method

Prepare the Dark Chocolate Layer

    Melt the Chocolate

    In a heatproof bowl, combine dark chocolate and unsalted butter. Melt over a double boiler or microwave in short bursts until smooth. Let cool slightly.

    Mix the Batter

    In a separate bowl, whisk together coconut sugar and eggs until light and frothy. Add vanilla extract and mix well.

    Combine Ingredients

    Gradually add the melted chocolate mixture to the egg mixture, stirring continuously. Sift in gluten-free flour and sea salt, mixing until just combined.

    Bake the Layer

    Preheat the oven to 180°C (350°F). Pour the batter into a greased dome-shaped mold and bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely.

Prepare the Toasted Meringue

    Whip Egg Whites

    In a clean bowl, beat egg whites with an electric mixer until frothy. Add cream of tartar and continue to whip until soft peaks form.

    Gradually add granulated sugar while continuing to whip until stiff peaks form and the mixture is glossy. Mix in vanilla extract.

    Toast the Meringue

    Spread the meringue over the cooled chocolate dome and use a kitchen torch to toast it until golden brown. (Alternatively, you can place it under a broiler for a few minutes, watching closely.)

Prepare the Peanut Topping

    Roughly chop the roasted peanuts and sprinkle with sea salt. Set aside for topping.

Prepare the Buttermilk Drizzle

    In a small bowl, whisk together buttermilk and maple syrup until smooth.

Assemble the Dish

    Plate the Dome

    Carefully unmold the chocolate dome onto a serving plate.

    Drizzle with buttermilk mixture, top with toasted meringue, and sprinkle chopped peanuts over the top.
