Method

Mashed Potatoes

    Prepare the Potatoes

    Peel the Russet potatoes and cut them into quarters. Place them in a large pot and cover with cold water.

    Boil the Potatoes

    Bring the pot of water to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes or until the potatoes are fork-tender.

    Drain and Mash

    Drain the potatoes in a colander and return them to the pot. Begin mashing the potatoes using a potato masher or a ricer until smooth.

    Add Butter and Cream

    Add the unsalted butter and heavy cream to the mashed potatoes. Mix well until combined and creamy.

    Season

    Season with salt and black pepper to taste. Mix until well incorporated.

Red Eye Gravy

    Cook the Ham

    In a skillet over medium heat, add the country ham slices. Cook until browned on both sides, about 3-4 minutes per side.

    Make the Gravy

    Remove the ham from the skillet and set aside. In the same skillet, add the coffee and water, scraping up any brown bits from the bottom of the pan.

    Season the Gravy

    Bring the mixture to a simmer and cook for 3-4 minutes. Season with salt and black pepper to taste.

    Combine

    Return the cooked ham to the skillet, allowing it to absorb some of the gravy for an additional minute.
