Preparation

  1. 1

    Chop the Vegetables

Finely chop the Scotch bonnet peppers, garlic cloves, ginger, and green onions. Make sure to wear gloves when handling the Scotch bonnet peppers to avoid irritation.

Mixing the Sauce

  1. 2

    Combine Ingredients

In a blender or food processor, combine the chopped peppers, garlic, ginger, green onions, soy sauce, apple cider vinegar, olive oil, brown sugar, thyme, allspice, salt, and black pepper.

  2. 3

    Blend Until Smooth

Blend on high speed until the mixture is smooth and well combined. You may need to stop and scrape down the sides to ensure everything is well incorporated.

  1. 4

    Transfer to Container

Pour the jerk sauce into a clean glass jar or container with a tight-fitting lid.

  2. 5

    Refrigerate

Seal the container and store in the refrigerator. The jerk sauce can be kept for up to 2 weeks.
