Method

Pulled Pork & Biscuits

  1. 1

    Prepare the Pulled Pork

Preheat your oven to 300°F (150°C). Rub the pork shoulder with salt and pepper. Place it in a roasting pan and cover tightly with foil. Bake for 4-5 hours until tender. Remove from oven, shred the meat with two forks, and mix with BBQ sauce.

  2. 2

    Heat the Biscuits

If using pre-made biscuits, follow package instructions to heat them in the oven. If homemade, bake until golden brown.

Mashed Potatoes & Red Eye Gravy

  1. 3

    Prepare the Mashed Potatoes

Peel and chop the Russet potatoes. Boil in salted water until tender, about 15-20 minutes. Drain, then return to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper.

  2. 4

    Make the Red Eye Gravy

In a skillet, melt 2 tbsp of butter over medium heat. Sprinkle with flour and whisk for 1-2 minutes. Gradually add chicken broth and brewed coffee, stirring until thickened. Season with salt and pepper.

Green Goddess Salad

  1. 5

    Prepare the Salad

In a large bowl, combine mixed greens, sliced cucumbers, diced avocado, and chopped green onions.

  2. 6

    Make the Dressing

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Drizzle over the salad and toss to combine.

Cauliflower Gratin

  1. 7

    Prepare the Cauliflower

Preheat your oven to 375°F (190°C). Steam the cauliflower florets until tender, about 5-7 minutes. Transfer to a baking dish.

  2. 8

    Make the Gratin

In a saucepan, heat heavy cream and 2 tbsp of butter until warm. Pour over the cauliflower, then top with shredded cheese and bread crumbs. Bake for 25-30 minutes until bubbly and golden.

Dessert

  1. 9

    Choose Your Dessert

Select either 4 pieces of Ode to the Dome or 8 pieces of Chocolate Truffles to accompany your meal.
