Method

Braised Pork

    Prepare the Pork

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.

    Brown the Pork

    Season the pork shoulder with salt, black pepper, and smoked paprika. Add the pork to the pot and brown on all sides.

    Add Liquid

    Pour in the chicken broth and add the bay leaves. Bring to a boil, then reduce to a simmer.

    Braise the Pork

    Cover the pot and let the pork braise for about 2-3 hours, or until it is tender and easily shreds with a fork.

    Shred the Pork

    Remove the pork from the pot and shred it using two forks. Return the shredded pork to the pot and stir to combine with the juices.

Poached Eggs

    Prepare the Water

    In a medium saucepan, bring the water and white vinegar to a gentle simmer over medium heat.

    Poach the Eggs

    Crack the eggs one at a time into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes, or until the whites are set but the yolks are still runny.

    Remove the Eggs

    Using a slotted spoon, carefully remove the poached eggs and place them on a paper towel to drain.

Hollandaise Sauce

    Whisk the Yolks

    In a heatproof bowl, whisk together the egg yolks and lemon juice until frothy.

    Heat and Add Butter

    Place the bowl over a pot of simmering water (double boiler). Gradually whisk in the melted butter until the sauce is thick and creamy.

    Season the Sauce

    Season with salt and a pinch of cayenne pepper to taste. Remove from heat.

Assembly

    Toast the Muffins (if using)

    If using gluten-free English muffins, toast them until golden brown.

    Assemble the Dish

    On each toasted muffin half, place a generous portion of the braised pork. Top with a poached egg and drizzle with hollandaise sauce.
