Chop the Beef
Using a sharp knife, finely chop the grass-fed beef tenderloin into small pieces. Aim for a mince-like consistency while still maintaining some texture.

In a medium bowl, add the chopped beef, capers, finely diced shallots, Dijon mustard, and egg yolk. Mix gently with a fork to combine without overworking the meat.

Add the chopped parsley, Worcestershire sauce, salt, and freshly ground black pepper to the mixture. Stir gently to combine all the ingredients evenly.

Using a ring mold or simply your hands, carefully shape the tartare mixture into a neat round shape on a serving plate.
