Beef Sliders

House-Made Pickles

Aioli

Method

Beef Sliders

  1. 1

    Prepare the Beef Patties

In a large bowl, mix the grass-fed ground beef with salt, black pepper, garlic powder, and onion powder until well combined. Form the mixture into four equal-sized patties.

  2. 2

    Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the patties for about 3-4 minutes on each side for medium doneness. During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.

  3. 3

    Toast the Buns

While the patties are cooking, lightly toast the brioche slider buns on the grill or in a toaster until golden brown.

House-Made Pickles

  1. 4

    Prepare the Pickling Liquid

In a saucepan, combine white vinegar, water, sugar, salt, and dill seeds. Bring the mixture to a simmer over medium heat, stirring until the sugar and salt dissolve.

  2. 5

    Slice the Cucumber

While the pickling liquid is heating, slice the cucumber into thin rounds.

  3. 6

    Pickle the Cucumbers

Place the cucumber slices into a jar and pour the hot pickling liquid over them. Add the garlic cloves. Let cool to room temperature, then refrigerate for at least 1 hour before serving.

Aioli

  1. 7

    Prepare the Aioli

In a medium bowl, whisk together the egg yolk, minced garlic, and lemon juice. Slowly drizzle in the olive oil while whisking continuously until the mixture emulsifies and thickens. Season with salt to taste.
